A Simple Egg Salad Sandwich

I've been craving an egg salad sandwich forever! The last time I had one of these babies was years ago, probably a Sunday after church. These were one of the many things my mom made for us after we got home from church. Usually because there were times we had an overload of eggs due to my dad's chickens. If ya love hard boiled eggs, this is the thing for you!



First we start with the ingredients: mustard, mayo, relish, and of course the eggs.

Real simple ingredients



Place the eggs in a pan and fill it until the eggs are submerged in water, About 3"- 4". Add salt to the water to prevent the shells from cracking. Cook on medium heat and wait till it gets to a boil.




Once boiling, place the lid on the pan and take the eggs off the burner. Let the eggs sit and cover for about 17 minutes. 




Grab a bowl and fill it with water and ice. Need to make the water nice and cold. Once the 17 minutes are up, place the eggs in the cold water. This stops the cooking process in the egg. Let the eggs sit for 10 minutes.



Now, the fun part! Crack them babies open! Do it very carefully, especially if you are using eggs straight from the coop. The whites tend to peel with the shell, so peel very slowly.

When you are done peeling the eggs, cut them into small pieces and place in a medium bowl.



Add the mayo and the mustard and mix together with a rubber spatula.




Now add the relish. I used two tablespoons in this mixture. If you love relish as much as I do, then it wouldn't hurt to add a little more. Go crazy!



Slap it on any bread, pepper it if you choose too, and ENJOY! See, easy. The only time consuming part is the eggs, but who cares! Hard boiled eggs are delicious! If you aren't a fan of relish, substitute it with something else. Some people do dill, or celery. Also, you can add lettuce to it too. Let me know what you put in it. I would love to know. Egg Salad Sandwich
makes 3-4 sandwiches


6 Hardboiled eggs
3 tablespoons of mayo
1 tablespoon of yellow mustard
2 tablespoons of relish
pepper (optional)
6-8 slices of bread

1. Place eggs in 3-4" of water. Set burner on medium heat. Once water starts to boil, take pan off burner and cover with lid. Let sit for 17 mins.

2. Place eggs in a bowl of cold water for 10 mins.

3. Peel and finely chop the eggs. Place in medium size bowl.

4. Mix in mayo, mustard and relish.

5. Place it on the slices of bread. Add lettuce if desired.
