Crack...I MEAN Chewy Brownie Cookies


 I found this recipe surprisingly when I purchased my WearEver cookie sheets. Just fiddling around in the kitchen one day, needing a chocolate fix, made them, and was surprisingly impressed! Who knew one of my favorite cookie recipes could be found in an instructions booklet?? I did not expect these to turn out so amazingly awesome like they did! These have been a really big hit with my family and friends.  They are chocolatey deliciousness, and you can't stop eating them! Ladies and gentlemen, I give you my Brownie Cookies! If you have a box of brownie mix sitting around in your cupboard and don't want plain ol' brownies, try these babies out! They they have the texture of a cookie outside, with gooeyness on the inside. They are known to my friends as "crack cookies", and they are hard to quit.






Lets start with the ingredients: Brownie Mix. My choice for this batch is Betty Crocker Dark Chocolate Fudge Brownie. Use whatever brownie mix is your favorite. I have used many different kinds and they all turn out the same: yummy!



Pour the mix into a large bowl, or electric mixing bowl. Add the flour and mix.



Add the oil, 1 large egg, water and mix it well. If it looks crumbly, add a couple more Tbsp of water and it should start to clump together. Don't panic, just add water!  Some brownie mixes need a little bit more moisture than others to get the dough the texture you need to roll them. Also, remember to have that egg out a half an hour before you start mixing the ingredients. Don't worry, it won't hurt you. It helps bind the ingredients together when its more at room temperature. 


Once it looks like the consistency you want, add the chocolate chips, and the chopped pecans. If you are not a nut lover, scratch the pecans and add a little bit more chocolate chips if you want. If you don't like nuts in your cookies, its okay...I'll try not to judge you...



I used milk chocolate chips for this recipe only because the brownie mix is dark chocolate.  Dark chocolate to me is rich enough and I thought these would balance it out. It did a little bit.



When it's all mixed well and looking good, roll up your sleeves. It's about to get a little messy. Go ahead and preheat the oven and grease a cookie sheet. Then put some powdered sugar in a shallow bowl. Take some of the dough and form a 1 1/2" ball. Roll that ball into the powdered sugar. Shake some of the powder off and place it on the cookie sheet. 



Once the oven is all heated up, put those babies in. Leave them in there for about 12 to 15 minutes. I advise to start with 12 minutes and check on them. You don't want to over bake them. When you see the tops of them cracking, then they are ready to come out. 



Let them cool for about 5 minutes on the cookie sheet. Place them on a wire rack to complete the cooling process. 


And you are done! The best way to eat them is right out of the oven. They are so gooey! They have the chewy outside of a cookie, but oh so gooey inside. Just like a delicious brownie. 



Warning: THESE ARE ADDICTING! I'm not saying this just because I'm addicted to them. Everyone that I know who has tried them, has a brownie cookie problem. Once you have one, there's no looking back. YOU ARE HOOKED FOR LIFE!...which, I guess isn't a bad thing. ;)



So, I hope you guys enjoy this recipe as much as I do. And the moral of the story is do not underestimate a instructional pamphlet; you just might find the recipe of all recipes. 


Chewy Brownie Cookies
 Makes: 2 1/2 - 3 Dozen

1 pkg. (10-15 oz.) brownie mix
1/2 c. all-purpose flour
1/4 c. oil
1 large egg
2 Tbsp. water
1 c. semi-sweet chocolate chips
1/2 c. chopped pecans
Powdered Sugar

1. In a larger bowl, mix brownie mix and flour. Add oil, egg and water; mix well. Add chips and nuts

2. Roll dough into 1 1/2" balls. Roll in powdered sugar. Place two inches apart on greased baking sheet.

3. Bake in preheated 350 degree oven 12 to 15 minutes or until tops of cookies begin to crack. Do not over-bake Set the pan on a wire cooling rack and cool for 2 minutes. Transfer the cookies directly to the rack and cool completely.
